Fettuccine alla Carbonara

Welcome to my blog!

I will be posting favorite recipes, photos, and various other projects I've started.

I love making new foods, and for the past couple of weeks my husband has been treated to a plethora of different homemade eats. Some were successful, others need a little tweaking.

My first post will be a recipe, fettuccine alla carbonara! I rather loved this one, so if you decide to try it out, let me know your thoughts!

Some of the ingredients

From start to finish, this should only take around 25 minutes! It makes 4 servings.

Ingredients:

6 slices of bacon, cut into one-inch pieces
6 ounces fettuccine or linguine (I used fettuccine)
1 egg, beaten
1 cup half-and-half, light cream, or milk (I used half-and-half)
2 tablespoons butter or margarine
1/2 cup grated Parmesan or Romano cheese
1/4 cup snipped fresh parsley
Coarsely ground black pepper

1. Cook bacon until crisp; drain.

2. Cook pasta according to package directions ("al dente" perfect in about 12 minutes); drain and keep warm.
3. Meanwhile, for sauce, in a saucepan combine egg, half-and-half, and butter. Cook and stir over medium heat (unless your stove runs hot, like mine, in which case I'd recommend low to prevent the half-and-half from burning before the sauce combines) until egg mixture just coats a metal spoon (about 6 minutes, but longer if you're cooking on lower heat); do not boil! Immediately pour sauce over pasta; stir gently to coat.

4. Add cooked bacon, Parmesan cheese, and parsley; stir gently to combine. Season with pepper. Serve immediately.

I served it with store bought crescent rolls; great for dipping in the sauce!

Yum!!
